Somalian Inspired Chicken Soup

  • 1 onion sliced thinly
  • 1 can green chili
  • 1 fire roasted jalapeno (optional)
  • 1 fire roasted red pepper not traditional, and optional
  • 1/4 teaspoons cardamom
  • 2 teaspoon berbere
  • 4 cloves garlic roughly chopped
  • 4 Roma tomato diced
  • 4 cups broth
  • 2 cups water
  • cilantro stems chopped
  • 1 tablespoon sea salt to taste
  • 2 lbs chicken thighs boneless, skinnless
  • juice of 1/2 lime


  • carrots shredded
  • 1/2 cabbage any color, shredded
  • 1 bunch radishes sliced very thinly
  • cilantro tops optional
  • juice of 1/2 lime
  • 1 teaspoon salt


  1. In a large pot or Dutch oven, brown onions with a little oil, over medium-high heat.

  2. Add spices and garlic stirring continually until you can smell them.

  3. Add in tomatoes. Use the liquid from the tomatoes to deglaze the pot by scraping the bottom as the juice sizzles.
  4. Turn down the heat to low and carefully add the broth and water.
  5. Stir in cilantro stems and salt
  6. Gently place the chicken in your broth and simmer for 30 minutes.
  7. While the chicken is cooking, mix all the salad ingredients together.
  8. Once the chicken is cooked, remove from heat.
  9. Take chicken out and either cut or shred into bite-sized pieces.
  10. Replace chicken in the broth, stir in lime juice
  11. Serve soup in a large bowl, warm, with the salad directly on top
