Dairy-Free Low-Carb Cauliflower Pizza Crust

A delicious, low-carb way to have your pizza, and eat your veggies too.

  • 1 head cauliflower grated, or 1 1/2 lbs cauliflower rice
  • 4 eggs
  • 2 cups almond flour
  • 1/3 cup coconut flour
  • 1/4 cup olive oil or avocado oil
  • 2 teaspoon salt


  1. Mix all ingredients together. A potato masher or your hands are the best tools for this.
  2. Form 2, 12-inch Pizzas on pizza pans (rubbed with oil) or sheet pans lined with silicone mats or parchment paper. The crusts should be about a ¼ inch thick.
  3. Bake at 400℉ for 12-15 minutes, until the crust is slightly golden.
  4. Top with your favorite toppings.
  5. Return to oven until the toppings are warm or cheese is melted. This cooking time will vary depending on the toppings you choose.

Recipe Notes

1-2 Tablespoons of tomato paste make a great sauce without making your pizza soggy. The paste will need to be spread very thinly but will give you the tomato flavor without all the extra moisture.

If you let the pizza cool down some, the crust will hold together better. As Alton Brown says, your patience will be rewarded.

After the pizza has cooled slightly, carefully move to a wire cooling rack with a spatula to prevent the bottom of the crust from becoming soggy.
