Low-Carb Cherry-Lime Coconut Chia Crunch Snacks

  • 1 cup cherries
  • ½ cup water
  • 1 lime zest and juice
  • 2 teaspoons vanilla extract
  • 1 teaspoon cardamom
  • ½ teaspoon salt high quality
  • 1 cup dried shredded coconut
  • cup chia seeds


  1. With a blender, blend cherries and water together, until you only see small pieces of cherries. If you are using frozen cherries it helps to let them thaw before blending.
  2. In a mixing bowl add cherry mixture and stir in lime juice and zest, vanilla, cardamom, and salt.
  3. Next, add coconut and chia seeds.
  4. Once all the liquid is absorbed, scoop 2 tablespoons of the mixture on to dehydrator rack and flatten down to no more than ½ inch thick. If you scoop and flatten within a round cookie cutter, your circles will be more uniform.
  5. Repeat until all the mixture is on the drying rack.
  6. Dehydrate at 125 ℉ for 12-16 hours, or until completely dried out.
  7. Store in an air-tight container.
